Ingredients:
- Eggs – 2
- Cherry tomatoes – 80 g
- Avocado – ½ medium (about 70 g)
- Rocket (arugula) – 30 g)
- Spring onions – 1 stalk
- Olive oil – 1 tsp (5 ml)
Cooking steps:
- Whisk eggs lightly
- Heat oil in pan
- Cook eggs until just set
- Top with avocado slices, tomatoes and spring onion
- Finish with fresh rocket and fold
