Buckwheat Veggie Bowl

Warm buckwheat tossed with broccoli and mixed vegetables in a light soy-based sauce.

Ingredients:

  • Buckwheat (dry) – 80 g
  • Broccoli florets (boiled) – 100 g
  • Frozen mixed vegetables – 150 g
  • Soy sauce – 1.5 tbsp (22 ml)
  • Vegetable oil – 1 tbsp (15 ml)
  • Garlic – 1 clove

Cooking steps:

  • Cook buckwheat until tender
  • Boil broccoli florets briefly
  • Heat oil, add garlic and vegetables
  • Add buckwheat and soy sauce
  • Toss everything together
Optional seasoning ideas (to taste): Sesame seeds, Chili flakes, Black pepper, A splash of sesame oil, Spring onions
